Red Lobster’s Lobster Pizza

I promise you’ll enjoy this simple, amazing appetizer, without the costs of going out to Red Lobster. It’s just as delicious as the restaurant’s version. I love the colors, the red of the lobster and tomatoes, green of the basil and white and yellow cheese. It gives it picture perfect presentation with very little effort.

I’ve done this with real crab meat as well, so I know I’ll be trying  – and loving – imitation crab meat the next time I need a budget friendly appetizer!

 

Red Lobster’s Lobster Pizza

Ingredients

  • 10 inch flour tortilla
  • 2 tbs garlic butter
  • 2 tbs grated parmesan cheese
  • 4 ounces drained and diced roma tomatoes
  • 2 tbs fresh basil
  • 2 ounces lobster meat
  • 1/2 cup shredded cheese (Italian five-cheese suggested)

Preheat oven to 450°F.

Prep your ingredients or dice and slice as you go, either way you’ll want to drain and dice tomatoes into pinky sized bits. Julienne or slice basil into 1/8 inch strips, do not chop those leaves! Chop lobster up into half inch or three quarter inch chunks, drain well.

If you prefer not to buy premade garlic butter, like me, you can make your own to match your love for garlic. Mince a bulb or two of garlic, then crush into softened butter.

Lightly brush or spread the butter across the surface of the tortilla. Then, in order sprinkle on; parmesan cheese, tomatoes, basil, lobster, and finally top with shredded cheese. If you’re prepping a few pizzas, let them chill in the fridge until ready to serve.

Now get the pan you’ll be cooking on, and coat lightly with olive oil. Then sprinkle on ground black pepper and kosher salt. This is essential to the delicious taste overall, giving your crust a taste of its own.

Place in oven, cook for four to five minutes. Using a pizza cutter, slice into eight wedges and squeeze fresh lemon over top. Enjoy!
